An officer takes the person into custody somewhere in Harris County and transports them to the booking facility that serves that agency. Nothing about bail can start until that transport is finished.
Identity, fingerprints, photograph, property inventory and a records check. This is the step that usually takes the longest, and it is why a name can be missing from the online roster for hours after an arrest actually happened.
A magistrate sets the amount, usually within 48 hours of the arrest, working from the county's bond schedule and the person's history and ties to the area.

The court forfeits the bond and issues a warrant. Failing to appear can also be charged on its own as bail jumping under Texas Penal Code §38.10.
The cosigner guaranteed the full face amount of the bond, not the premium. If the bond is forfeited and not reinstated, that full amount — plus recovery costs — becomes their responsibility.
